Every bagel gets boiled in molasses syrup first. That is what makes the crust shine and the middle chew.
The craft

A live starter is where the tang comes from, and what makes a bagel sturdy enough to split and toast without falling apart.

Every bagel takes a swim before it bakes. The crust comes out dark and glossy — plain water never gets close.

Nothing added to stretch the shelf life. Flour, water, salt, starter and whatever goes on top.
Active drop

No toppings. Just sourdough and the molasses boil. This is the one that shows if a bagel is any good.

Poppy, sesame, garlic, onion and salt. It gets pressed in before baking, so it stays on the bagel instead of the bottom of the bag.

Cinnamon in the dough, raisins folded through, sugar on top. The crust turns dark and sweet in the oven.
Parmesan and garlic baked right onto the crust. The cheese crisps up brown at the edges.

Sharp cheddar melted out to the edge, with fresh jalapeño on top. This one has real heat.

Whole berries folded into the dough. They burst in the oven and turn the inside purple. Sweet, but not too sweet.
Covered in sesame seeds. They toast up golden in the oven.
The everything blend, plus sharp cheddar over the top. Two good things at once.

Fresh rosemary in the dough, coarse salt on top. Best eaten warm, straight out of the bag.
Asiago spread over the top. It crisps where it hits the hot crust.
A thick layer of poppy seeds over plain sourdough.
Chocolate chips folded through the dough. They melt into the crumb and stay soft.

At the stall
Saturdays, 6 – 11:30 AM. Walk up, no order needed.
Custom orders
Custom orders have a half dozen order minimum. Orders past two dozen are priced per order.
Catering
3 dozen minimum, priced per order. 14 days’ notice.
Catering & custom orders
Same bagels, just a lot more of them. Send over a date and a headcount. The rest gets sorted from there.

3 dozen minimum
The smallest catering order is three dozen. Anything less counts as a custom order.
Priced per order
Past two dozen, the price depends on the flavors and the count. Send the details and a quote comes back.
14 days' notice
Sourdough works on its own clock, and a big bake has to be planned around the market. Earlier is always better.
